Meatless Monday


I’ll never have another “food” blog because I suck at remembering to take pictures of everything I cook. Hell I’m lucky if I remember to take a picture before I eat. I’ve decided I would try something new for Meatless Monday. I thought I would share some of the recipes from other bloggers that I plan on making for dinner this week. This week I’m going to start off with the dinner recipes but I plan on alternating between breakfast, lunch, dinner and desserts for Meatless Monday’s.  I’ll try to share after pictures on instagram, Keyword? Try. lol

This weeks menu:

Monday – Vegan Corn Chowder

Tuesday – Quinoa and kale with baked ginger tofu

Wednesday – Loaded Veggie Chickpea Wrap

Thursday – charred broccoli + tofu stuffed avocados with sweet lemon curry sauce

Friday – gazpacho

New Beginnings

New DayI turned 45 last month and Summer Solstice has always been a day of new beginnings for me. So I decided it was time to revamp a Delicious Mess and myself. I’ve been slacking on my yoga, meditation and eating healthy so all that weight I lost has returned, and all that inner peace and self esteem I gain are almost gone.

So with that being said, I woke up this morning meditated for an hour, drank my warm lemon water and hit the yoga mat. It felt so good. Finally back to my morning routine. I usually don’t meditate for a full hour in the morning but I found a great video on youtube that really helped me get deep into my meditation.

I’m still a vegan, but I haven’t been a very healthy vegan the past few months. That’s seriously about to change. I did a major clean out today of the whole kitchen. I boxed up everything I could take to the food pantry and the rest I threw away. Goodbye junk food and hello happy healthy food.

I moved from the kitchen to my closet and did a major clean out. I got rid of everything I haven’t worn in over a year. I started this process last summer. I started turning my hangers around every time I wore something, so it was really easy for me to tell what I’ve been wearing and what I haven’t. I gave away my last few pair of high heels.  In the past few years I’ve went from 4 inch heels to flats, best thing I’ve ever done for my back and hips.

where have i been

I can’t believe it’s been two months since I blogged. It’s been a wild crazy month. I don’t even know where to begin. In fact I’ve started this post 7 times and each time something has happens and I’ve had to stop.

Where do I start,… Thanksgiving was really nice. The next day all hell broke lose. Big Papi was on his computer and I noticed his voice slurring and the left side of his face was drooping. I of course thought he was having a stroke. I gave him two baby asprin to chew up and took him to the ER. After six hours of bloodwork, MRI, 2 C-Scans the drs figured out he had Bells Palsy. I had no clue what Bell’s Palsy was. Come to find out Big Papi had an infection from the flu he had the week before. We are so thankful it wasn’t a stroke. I’m happy to say his face is no longer droopy and his speech is finally back to normal.

Just when things started to calm down mom went outside last week to fill up her bird feeder and she slipped and fell down and broke her tailbone. Now she’s on pain meds and having to use a walker. I feel so sorry for her. She can barely stand long enough to walk to the bathroom.

Hopefully things will start to calm down around her and I can get back to blogging everyday :)

what did they say

Hey Y’all welcome back for some more What did they say Wednesday. This week I’m a little under the weather with a cold so I’ve been surfing the internet looking for yummy yet healthy soup recipes. I’ve been printing recipes and making soup like a mad woman the past few days. But hey on a plus note I’m feeling a lot better today.
