It’s been a long week

Well I thought I would come update everyone on my step father. Monday Dec 5th at 1:45pm with my mother and I standing beside him my step father went to be with our heavenly Father. Since his passing it’s really been a long week. Nothing was re-planned and my mother was no prepared for anything. We spent all day tuesday making calls and arrangements. Wednesday mom and I spent the day calling people and letting them know he was gone. Thursday I had to take mom to the dr because she was still getting over the flu. I’m happy to say she’s finally over the flu and feeling better. Friday we all crashed from exhaustion. It’s really been a long week and I want to thank everyone from the bottom of my heart for all the thoughts and prayers.

Yeah that’s what I’m sure everyone has been asking themselves. It’s been a long crazy few months.  Big Papi and I both got the flu then my parents went on a three week cruise so we watched their dog and he was sick with tummy issues almost the whole time. Then my parents got back from their cruise and my step father became really sick the next day and my mom took him to the ER and he’s been in ICU ever since. He had heart problems and he went into heart failure, then his lungs filled up with fluid and they had to do surgery and then his kidney’s shut down so now he’s on dialysis. Or I should say he was up until yesterday when they said dialysis isn’t working. He now has pneumonia and he’s on life support. I feel so sorry for my mother, it’s really been a emotional roller coaster ride for her the past few weeks.

So now you know where I’ve been………….. I don’t even have the energy to say I’m sorry for not blogging. All I can ask is that everyone light a candle and say a prayer for my step father. Thank you

I’m a Southern Girl

Last weekend Papi and I went shopping at Academy for him some new work boots and while we were there I had to load up on my Southern girl tee-shirts. I love to clean house, sleep and workout in them. They are cheap ( less then 5 bucks ) and they are cute.

Eggplant and Spinach Frittata

Eggplant and Spinach Frittata

 

Eggplant and Spinach Frittata

Ingredients

6 eggs, beaten
1 small eggplant diced up
1/4 cup milk
1/8 teaspoon ground black pepper
1 tablespoon butter or margarine
1 large onion, chopped
2 cups frozen spinach thawed
1/4 cup shredded Cheddar cheese

Directions

1. Mix eggs, milk and black pepper.
2. Heat butter in large ovenproof nonstick skillet over medium heat. Add eggplant,onion and spinach and cook until tender. Add egg mixture and Cook over medium-low heat 8 minutes or until eggs are set but still moist.
3. Sprinkle cheese over egg mixture.
4. Broil 4″ from heat 2 minutes or until golden brown. Cut into wedges.

For the past week I’ve had a bad sinus and ear infection. Finally monday my doctor did a cscan and found out I had two lymph nodes there were infected and swollen the size of a lemon so yesterday morning at 6am I had out patient surgery. I pray I never have to have a lymph node drained again. Very painful. I’m still taking pain meds and having to use an ice pack on my face and throat.

Big Papi has been so wonderful. Last night he go in the kitchen and made me a delicious frittata. I feel truly blessed to have him in my life. If only I could teach him how to wash dishes after he cooks life would be perfect lol
